Do you know the requirement for “Edomaezushi”? It is some red vinegar in sushi rice. The red vinegar is the rich vinegar which is made from the fermented sake lees. Nowadays, it’s very rare that shops use red vinegar. But this Tsukiji Kagurazushi Honten uses vinegar in sushi rice substantially. So, you can enjoy the genuine Edomaezushi there.
This red vinegar is produced at the “Ichinokura” in the Sendai prefecture. It creates a different taste from the ordinary sushi.

It is quite refreshing to get up early in the morning with an effort and eat freshly caught fish in Tsukiji. This shop is open from early morning, which is rare for a sushi shop. You can enjoy delicious sushi early in the morning. It’s a luxury!
The selling point of this shop is that the 30 limited portions per day are provided for ¥2,400. Normally, it costs ¥5,000 for a set. But as it is limited to only 30 portions, you can have one at a half price. Please don’t be late!

In Tsukiji, this shop has a clean looking inside. It used to be in Harajuku, but it moved to Tsukiji. So, due to it being a brand-new shop, the shop is very clean. The recommended menu is “Chakinzushi”. There are a lot of seafoods inside the rice and it is covered with the Mitsuba leaf. It costs ¥980 for 2 of them.
You can’t have Chakinzushi in any other shops in Tsukiji. It is exquisite. Also another precious menu is “Suzumebozushi” using the fresh sea-bream.
